History
Hyssop is a perennial shrub, found in Europe, North Africa and Asia Minor. Native to the Mediterranean coasts, it grows in a scrubland-like environment, prefers sunny locations and a rather dry and well-drained soil. Its flowers can be purple, blue, white or red and are grouped in spikes. Known as a vegetable as a condiment, its fresh leaves are used as herbs in soups, salads, sauces. It is also found in the composition of certain alcohols and liqueurs (Grande-Chartreuse, Bénédictine, Pastis…)
