USA organic family EDEN Aduki (adzuki) beans Vigna angularis are soaked overnight and pressure cooked with no chemical additives at Eden’s certified organic, kosher cannery. Aduki are adaptable to any cuisine, and highly regarded in macrobiotics. They are Japan’s most popular bean, traditionally served there on New Year’s to bring good fortune, and at other festive occasions. They have many dessert and confection recipes based on them. In 1974, Eden Foods purchased a large shipment of aduki beans and shipped them down the St. Lawrence Seaway to Detroit, leaving half of them in Toronto. They were distributed to organic farmers in both countries for use as seed. This brought aduki bean cultivation to the Western Hemisphere. They are delicious in soup, stew, dips, spreads, and desserts, great with winter squash, sweet corn, and other sweet vegetables, perfect with whole grain, especially brown rice. No salt added.
