This all-purpose mix also takes advantage of the different properties of each ingredient, instead of relying on only a single type of flour to bring out the texture and flavour.

For general baking, substitute for wheat flour at a 1:1 ratio. It is recommended to add additional egg whites, gelatin, or skim milk powder to increase protein content as needed.
