Description
Egg Albumen Powder is made from spray dried pasteurized egg whites. Yeast is added to reduce and stabilize the natural sugars found in the albumen.
Ingredients
Egg white, citric acid, baker's yeast.
Uses
Use for white cake mixes, meringues, marzipan, and other recipes that require egg whites. Add 1 part egg albumen powder to 7 parts water (by weight). Before wetting, blend with other dry ingredients. Proportions may vary according to experience and need.
½ tsp Egg Albumen + 2 ¼ tbsp of Water = 1 extra large Egg White
Storage
Product should be kept in a cool, dry, clean area. It is essential that moisture be kept from entering the bag. Refrigeration is not required. Estimated shelf life is approximately 12 months.
