The yellow cornmeal is prepared by grinding the organic degermed yellow corn kernels into a coarse consistency. Corn is a versatile grain which contains no cholesterol and is high in polyunsaturated fat. It is also high in fibre and contains many of the nutrients essential to proper human development. Yellow cornmeal has the highest level of beta carotene of all varieties.
Stir 1 cup of cornmeal into 4 cups boiling water. Add 1 tsp salt and return to a boil, stirring constantly. Reduce heat and cook for an additional 5 minutes.
Organic cornmeal can be used to make different varieties of baked goods such as corn bread, pancakes, cooked cereal, polenta, tacos, and tortillas. If used as a wheat flour substitute, more water will generally be required.
