Uses
When used for bread making, soy flour provides improved water absorption and dough handling properties. It has a tenderizing effect such as that of non-fat dry milk. It is best combined with other flours so that its strong taste is not predominant. In baking, the addition of spices, nuts, and fruits helps to enhance the flavour of soy flour.
Storage
Product should be stored in a dry, clean area at temperatures not exceeding 20˚C and 60% relative humidity. Optimum shelf life is approximately 6 months under proper storage conditions.
