Great Northern beans are ivory-white ovals, slightly kidney shaped and with a tough skin. They are about twice the size of navy beans and black-eyed peas. Great Northern beans resemble the lima bean in shape, but have a delicate, distinctive flavour and a powdery, cake-y texture.

Rinse 1 cup beans. Pour into boiling water and cover. Soak overnight, at least 6 hours. Drain and discard soaking water. Add 4 cups fresh water and simmer over low heat until tender, approximately 2-2 1/2 hours.
